Vinification: grapes are placed in the press to avoid lacerations and undergo a soft pressing. The obtaining of froth: the must obtained is placed in an autoclave with the addition of selected yeasts to start the alcoholic fermentation. The latter takes place at a controlled temperature of 15° -16° for a period of at least 60 days.
Ageing: six months in the tank on fine lees and bottled in the summer of the year following the harvest.
Characeristics: the color is golden yellow, with a fine effervescence, persistent and never aggressive to the taste. The nose reveals good minerality, with floral notes of acacia and broom and light tones of crusty bread. In the mouth, soft, elegant and fresh, with returns of mineral flavor and almond finish. Pleasant aperitif, finds its ideal pairing with appetizers and dishes of white meat, fish based dishes and also shellfish.
Serving temperature 7° - 9° C
